Swiss Chard-Lentil-Rice Bowl

Ingredients:

  • 1/2 cup Brown Rice (uncooked)

  • 3/4 cup Water

  • 1 tbsp Coconut Oil

  • 8 cups Swiss Chard (washed, stems removed and chopped)

  • 1 tsp Cumin

  • 1 tsp Paprika

  • 2 tbsps Extra Virgin Olive Oil

  • 1 Garlic (clove, minced)

  • 1 tbsp Apple Cider Vinegar

  • 2 cups Lentils (cooked, drained and rinsed)

  • Sea Salt & Black Pepper (to taste)
